Probe the secrets and basic principles of ayurvedic cooking under the experienced and loving guidance of Leela Mata. Those of you who have already had the pleasure of participating in her workshops know how deeply she can initiate you into wisdom that is not easily found in cookbooks. This course will include a combination of theory and practice. You will learn:

the meaning of the flavours in Ayurveda
the energetic effects of different foods and their forms of preparation
the effects on each dosha (bodily constitution)
the effects of foods and their preparation on body and mind
composition of menus according to the doshas - which foods and combinations are good for each constitution and in which situation
you will prepare ayurvedic and Indian dishes as a group, giving consideration to ayurvedic principles

Among other things, you will learn to cook:

dhal, khicheri, vegetables
chapati, roti, puri
chutneys that are aromatic, spicy and cooling
curries
rice dishes such as pulao, saffron rice, simple Indian rice, aromatic yoghurt-rice
desserts: halwa, khir, shiri, laddhu
ayurvedic tea, lassi, takrana
preparation of ghee and yoghurt
... and other surprise-dishes!

This training is especially appropriate for Ayurveda health consultants, who offer ayurvedic nutritional consulting or ayurvedic cooking-workshops or want to know more about ayurvedic cuisine. It is also appropriate for amateur and professional cooks who want to include ayurvedic dishes in their menus.
